Description

Rich, chocolatey brownies that highlight the magic of cocoa powder. Learn how cocoa powder transforms flavor, texture, and color for perfectly fudgy or cakey brownies every time.

Ingredients

1 cup (125g) all-purpose flour

¾ cup (65g) unsweetened cocoa powder (natural or Dutch-process)

1 cup (200g) granulated sugar

½ cup (100g) brown sugar

1 cup (225g) unsalted butter, melted

3 large eggs

2 tsp pure vanilla extract

½ tsp baking powder (use if natural cocoa) or ½ tsp baking soda (if recipe calls for it)

¼ tsp salt

1 cup (170g) chocolate chips (optional)

Instructions

Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan.

In a medium bowl, whisk flour, cocoa powder, baking powder/soda, and salt.

In a large bowl, whisk melted butter, sugar, brown sugar, eggs, and vanilla until smooth.

Gradually fold in dry ingredients until just combined. Do not overmix.

Stir in chocolate chips if desired.

Pour batter into prepared pan and spread evenly.

Bake for 25–30 minutes, until a toothpick inserted in the center comes out with moist crumbs (not wet batter).

Cool completely before cutting into squares.

Notes

For fudgy brownies, increase cocoa powder slightly and reduce flour.

For cakey brownies, use a bit less cocoa powder and slightly more flour.

Dutch-process cocoa gives a darker, smoother flavor; natural cocoa yields a tangier, more intense chocolate.

Bloom cocoa powder in hot water or coffee for richer flavor.
