Ingredients

Biscuits:

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • ½ cup cold plant-based butter
  • ¾ cup plant-based milk

Gravy:

  • 2 tbsp plant-based butter
  • 1 cup mushrooms, finely chopped
  • ½ cup onion, finely chopped
  • ¼ cup all-purpose flour
  • 2 cups vegetable broth
  • 1 cup plant-based milk
  • 1 tsp dried thyme
  • ½ tsp dried sage
  • ¼ tsp black pepper
  • Salt, to taste


Instructions

  1. Make the Biscuits: Preheat oven to 400°F (200°C). In a large bowl, whisk flour, baking powder, and salt. Cut in cold butter until crumbly. Stir in plant-based milk just until combined. Gently pat dough into a 1-inch thick disc, cut into rounds, and place on a baking sheet. Bake 15–20 minutes until golden.
  2. Cook the Gravy Base: In a skillet, melt plant-based butter over medium heat. Add mushrooms and onion, sauté 5–7 minutes until soft.
  3. Thicken: Stir in flour and cook for 1 minute. Gradually whisk in vegetable broth and plant-based milk until smooth.
  4. Season & Simmer: Add thyme, sage, pepper, and salt. Simmer 5–10 minutes until thickened.
  5. Serve: Split warm biscuits and ladle gravy over the top. Enjoy immediately.

For vegan: use vegan butter and milk alternatives.

For gluten-free: substitute a 1:1 gluten-free flour blend.
