Description

Discover a fun and delicious twist on lunch with these Turkey Pancake Rollups! Thinly sliced turkey and your favorite spread are wrapped in soft pancakes for a savory-sweet handheld meal that’s perfect for a quick lunch, snack, or light dinner. Easy to customize and kid-friendly!

Ingredients

  • 4-6 soft, pliable pancakes (8-inch/20cm diameter)

  • 4-6 slices cooked turkey breast, thinly sliced

  • 1/4 cup spread (cream cheese, hummus, or garlic aioli)

  • Optional Fillings: Spinach leaves, cheese slices, avocado, bell peppers, cucumber

Instructions

  1. Prepare: Lay pancakes flat on a clean surface.

  2. Spread: Spread a thin, even layer of your chosen spread (cream cheese, hummus, etc.) over each pancake, leaving a small border around the edge.

  3. Layer: Place a slice or two of turkey over the spread. Add any optional fillings (spinach, cheese, or vegetables) in a line down the center.

  4. Roll: Tightly roll up each pancake, starting from one side. Tuck in the fillings as you roll.

  5. Slice & Serve: Slice each roll into 1-inch pinwheels or serve whole. Enjoy immediately.

Notes

Pancake Tip: Use thinner, pliable pancakes for easier rolling. Gently warm store-bought pancakes for a few seconds in the microwave if they are too stiff.

Don’t Overfill: Avoid overfilling the pancakes to prevent them from breaking or becoming messy to eat.

Make-Ahead: Assemble rollups, wrap tightly in plastic wrap, and refrigerate for up to 24 hours. Slice just before serving.

Kid-Friendly: Let kids choose their own fillings! This is a great way to get them involved in the kitchen.

Dipping Sauce: Serve with a side of ranch, honey mustard, or cranberry sauce for dipping.
