Description

A homemade copycat version of the Taco Bell Grilled Chicken Burrito. Easy to make at home with lean grilled chicken, tortillas, veggies, and simple seasonings. A healthier alternative since the original menu item was removed.


Ingredients

  • 2 cups cooked grilled chicken breast, diced
  • 4 medium flour tortillas (whole grain optional)
  • 1 cup cooked rice (optional, for extra carbs)
  • ½ cup shredded cheddar or Mexican cheese blend
  • ½ cup salsa or pico de gallo
  • ½ cup shredded lettuce
  • ¼ cup light sour cream or Greek yogurt
  • ½ cup sautéed peppers & onions (optional)
  • Salt, pepper, cumin, chili powder (to taste)


Instructions

  1. Preheat a skillet or grill pan. Season chicken with cumin, chili powder, salt, and pepper. Cook until fully done, then dice.
  2. Warm tortillas on a skillet for 20–30 seconds per side.
  3. Place chicken, rice, cheese, salsa, lettuce, and sour cream in the center of each tortilla. Add veggies if desired.
  4. Fold tortilla sides inward, then roll tightly into a burrito.
  5. For a grilled effect, place the burrito seam-side down on a skillet and press lightly until golden brown. Serve warm.

Notes

Use whole wheat tortillas for added fiber.

Greek yogurt can replace sour cream for lower fat.

Add extra veggies like spinach, tomatoes, or corn for more nutrients.

Skip rice if you prefer low-carb.
