Description

Discover the joy of stuffed pancakes: fluffy pockets of deliciousness filled with sweet or savory surprises. This fun and fulfilling breakfast is a versatile, customizable treat perfect for family activities and any meal of the day.

Ingredients

  • For the Pancakes: Your favorite pancake batter (prepared slightly thicker than usual)

  • Sweet Filling Options: Chocolate chips, fresh berries, Nutella, jams/preserves, and peanut butter with banana.

  • Savory Filling Options: Shredded cheese (cheddar, mozzarella, or feta), sausage, spinach and ricotta, sautéed mushrooms, and scrambled eggs.

Instructions

  1. Prepare Batter: Make your pancake batter according to your recipe, aiming for a slightly thicker consistency to help contain the fillings.

  2. Heat Pan: Heat a griddle or non-stick pan over medium heat and lightly grease it.

  3. Pour & Fill: Pour a small amount of batter onto the hot griddle to form a pancake. Quickly place your chosen filling(s) in the center of the wet batter.

  4. Cover: Carefully pour a little more batter over the filling to completely cover it.

  5. Cook & Flip: Cook until the bottom is golden brown and bubbles form on the surface. Carefully flip the pancake with a thin, flexible spatula.

  6. Finish Cooking: Cook the other side until golden brown and the filling is warmed through.

  7. Serve: Remove from the pan and serve immediately.

Notes

Don’t Overfill: Using too much filling will make the pancake difficult to flip and seal.

Perfect Flip: Use a thin, flexible spatula for the easiest flipping and to prevent breaking.

Make Ahead: Cooked stuffed pancakes can be frozen. Cool completely, freeze in a single layer, then transfer to freezer bags. Reheat in the oven, toaster, or pan for best results (microwaving can make them soft).

Dietary Swaps: Easily adapt this recipe:

  • Gluten-Free: Use a gluten-free pancake mix and ensure fillings are gluten-free.
  • Dairy-Free: Use plant-based milk and dairy-free butter/oil and fillings.
