Description
Fluffy, high-protein pancakes made with real foods (oats, egg whites, and cottage cheese); no protein powder needed. Naturally sweet, quick, and perfect for busy mornings.
Ingredients
- 1 cup (240 g) low-fat cottage cheese
- 1 cup (240 ml) liquid egg whites (or 4 large egg whites)
- 1 cup (90 g) old-fashioned rolled oats
- 1 small ripe banana, mashed (about 100 g); optional, for sweetness
- 1 tsp baking powder
- 1 tsp vanilla extract
- ¼ tsp fine sea salt
- Neutral oil or butter for the pan (about 2 tsp total)
Optional mix-ins (choose 1–2): 2 Tbsp ground flaxseed, ¼ tsp cinnamon, ¼ cup blueberries, 2 Tbsp mini chocolate chips, 2 Tbsp chopped nuts.
Instructions
- Blend batter: Add cottage cheese, egg whites, oats, banana, baking powder, vanilla, and salt to a blender. Blend until smooth (30–45 sec). Rest 5 minutes to let oats hydrate.
- Preheat griddle: Heat a lightly oiled non-stick skillet/griddle over medium.
- Cook: Pour ¼ cup batter per pancake. Cook 2–3 minutes until edges look set and bubbles appear; flip and cook 1–2 minutes more until golden and springy.
- Serve: Top with fruit, yogurt, nut butter, or a drizzle of maple syrup.
Notes
Texture control: If batter thickens while resting, splash in 1–2 Tbsp milk/water. If too thin, blend 1–2 Tbsp more oats.
Gluten-free: Use certified GF oats.
Vegan option: Swap 1 cup egg whites and cottage cheese for ¾ cup silken tofu, 2 Tbsp flaxseed, and ¼–⅓ cup plant milk; keep the rest the same.
Make-ahead: Refrigerate cooked pancakes for 3–4 days or freeze up to 2 months; reheat in a toaster.
Flavor twists: lemon-blueberry (add zest + berries), cinnamon-apple (finely diced apple + cinnamon), and mocha (1 Tbsp cocoa + pinch espresso powder).
