Description

Whip up a batch of these incredibly soft, chewy, and healthy peanut butter banana oatmeal cookies! Made with simple, wholesome ingredients and naturally sweetened with ripe bananas, they’re the perfect guilt-free snack or breakfast cookie that everyone will love.

Ingredients

  • 2 large ripe bananas, mashed (about 1 cup)

  • 1/2 cup creamy peanut butter

  • 1 1/2 cups old-fashioned rolled oats

  • Optional Add-ins: 1 tsp vanilla extract, 1/2 tsp cinnamon, 1/4 cup chocolate chips, or 1/4 cup chopped nuts

Instructions

  1. Preheat: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. Mash: In a medium bowl, thoroughly mash the ripe bananas with a fork until smooth.

  3. Mix: Stir in the peanut butter until fully combined with the banana.

  4. Combine: Add the oats and any optional add-ins (vanilla, cinnamon, chocolate chips). Mix until everything is well incorporated.

  5. Scoop: Drop rounded tablespoons of the dough onto the prepared baking sheet. Gently flatten each cookie with your fingers or the back of a spoon (they won’t spread much).

  6. Bake: Bake for 12-15 minutes, or until the edges are lightly golden.

  7. Cool: Let the cookies cool on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely.

Notes

Banana Ripeness: The riper the bananas, the sweeter your cookies will be.

Texture: For a chewier cookie, use old-fashioned rolled oats. For a softer texture, use quick oats.

Customize: Feel free to add 1-2 tbsp of maple syrup or honey if you prefer a sweeter cookie.

Storage: Store cooled cookies in an airtight container at room temperature for 3-4 days or freeze for up to 2 months.

Vegan Option: Ensure your peanut butter and chocolate chips are vegan-friendly.
