Description
A comforting and naturally delicious chicken noodle soup made with bone-in chicken, fresh vegetables, and simple seasonings. This classic soup is wholesome, hearty, and perfect for family meals or when you need a soothing bowl.
Ingredients
- 1 ½ lbs (680 g) bone-in chicken thighs or drumsticks
- 8 cups water or chicken broth
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 6 oz (170 g) egg noodles (or pasta of choice)
- 1 bay leaf (optional)
- 1 tbsp olive oil (optional, for sautéing)
- Salt & black pepper, to taste
- Fresh parsley or dill, chopped (for garnish)
Instructions
- Place chicken in a large pot and cover with water or broth. Bring to a boil, then reduce heat to a simmer.
- Add onion, carrots, celery, garlic, bay leaf, salt, and pepper. Simmer for 1 hour until chicken is tender.
- Remove chicken from pot, let cool slightly, and shred meat from bones. Discard skin and bones.
- Strain broth to remove cooked vegetables for a clear soup base (optional). Return broth to the pot.
- Add noodles and cook until al dente, 6–8 minutes.
- Return shredded chicken to the pot, stir gently, and adjust seasoning.
- Garnish with fresh parsley or dill before serving.
Notes
Use bone-in chicken for richer flavor.
Don’t overcook noodles; they continue absorbing liquid after cooking.
Add peas, corn, or green beans for extra nutrients.
A squeeze of lemon juice brightens the broth.
Soup keeps 3–4 days in the fridge or up to 3 months frozen.
