Description

Light, airy, and low in carbs, cloud bread (oopsie bread) is a diabetic-friendly alternative to traditional bread. Made with just eggs and cream cheese, it’s a simple recipe that helps manage blood sugar while still enjoying a bread-like texture.

Ingredients

  • 3 large eggs, separated
  • 3 tbsp cream cheese (softened)
  • 1/8 tsp cream of tartar (optional, for structure)
  • Pinch of salt

Instructions

  1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In one bowl, beat the cream cheese with the egg yolks until smooth.
  3. In another bowl, beat egg whites with cream of tartar and salt until stiff peaks form.
  4. Gently fold the yolk mixture into the whipped egg whites.
  5. Spoon the batter onto the baking sheet to form rounds.
  6. Bake for 20–25 minutes until golden brown.
  7. Let cool before serving.

Notes

Best eaten fresh but can be stored in an airtight container for up to 3 days.

Flavor variations: add cinnamon/vanilla for sweet, or herbs/garlic powder for savory.

Pairs well with avocado, eggs, or lean proteins for a balanced diabetic-friendly meal.
