Description

Ingredients

For the Crust:

  • 1 ½ cups gluten free all-purpose flour blend (with xanthan gum)
  • ½ cup powdered sugar
  • ¾ cup (1 ½ sticks) cold unsalted butter, cubed
  • ¼ teaspoon salt

For the Filling:

  • 4 large eggs
  • 1 ½ cups granulated sugar
  • 6 tablespoons gluten free all-purpose flour blend
  • ½ cup freshly squeezed lemon juice (about 34 lemons)
  • 2 tablespoons lemon zest
  • Powdered sugar for dusting (optional)


Instructions

  1. Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
  2. Whisk together gluten-free flour, powdered sugar, and salt in a medium bowl.
  3. Cut in cold butter until the mixture resembles coarse crumbs. Press into pan.
  4. Bake the crust for 18–20 minutes, until lightly golden.
  5. In a bowl, whisk eggs and sugar until smooth. Add gluten-free flour, lemon juice, and zest; mix until well combined.
  6. Pour filling over warm crust and bake 25–30 minutes, until filling is set but slightly jiggly.
  7. Cool completely in the pan. Lift out with parchment, dust with powdered sugar, and cut into squares.

Notes

Use a flour blend with xanthan gum for structure.

Always use fresh lemon juice, not bottled.

Chill completely before slicing for clean edges.

Blind-bake crust to avoid sogginess.
