Ingredients
For the Crust:
- 1 ½ cups gluten free all-purpose flour blend (with xanthan gum)
- ½ cup powdered sugar
- ¾ cup (1 ½ sticks) cold unsalted butter, cubed
- ¼ teaspoon salt
For the Filling:
- 4 large eggs
- 1 ½ cups granulated sugar
- 6 tablespoons gluten free all-purpose flour blend
- ½ cup freshly squeezed lemon juice (about 3–4 lemons)
- 2 tablespoons lemon zest
- Powdered sugar for dusting (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
- Whisk together gluten-free flour, powdered sugar, and salt in a medium bowl.
- Cut in cold butter until the mixture resembles coarse crumbs. Press into pan.
- Bake the crust for 18–20 minutes, until lightly golden.
- In a bowl, whisk eggs and sugar until smooth. Add gluten-free flour, lemon juice, and zest; mix until well combined.
- Pour filling over warm crust and bake 25–30 minutes, until filling is set but slightly jiggly.
- Cool completely in the pan. Lift out with parchment, dust with powdered sugar, and cut into squares.
Notes
Use a flour blend with xanthan gum for structure.
Always use fresh lemon juice, not bottled.
Chill completely before slicing for clean edges.
Blind-bake crust to avoid sogginess.
