Ingredients

  • 3 large yellow or sweet onions, thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 3 garlic cloves, minced

  • 1 bay leaf
  • 1½ cups long-grain rice (Basmati or similar)
  • 4 cups beef broth (more if needed)
  • 1½ cups shredded Gruyere cheese (or Swiss/provolone as substitute)
  • Salt and black pepper, to taste
  • Optional: 1 tbsp dry sherry or white wine (for deglazing)


Instructions

  1. Caramelize onions: Heat butter and olive oil in a Dutch oven over medium-low. Add onions and cook slowly for 30–45 minutes until deep golden brown.
  2. Add aromatics: Stir in garlic, thyme, and bay leaf. Cook 1 minute until fragrant. Deglaze with sherry/wine if using.
  3. Toast rice: Add rice, stirring constantly for 2–3 minutes.
  4. Simmer: Add beef broth, bring to a boil, then reduce heat, cover, and simmer 18–20 minutes until rice is tender and liquid is absorbed. Remove bay leaf.
  5. Broil with cheese: Spoon into oven-safe bowls, top with Gruyere, and broil 2–3 minutes until melted and bubbly.
  6. Serve: Garnish with thyme or parsley. Serve hot.
