Ingredients
- 6 large egg whites

Pinch of salt and pepper

2 tbsp milk or plain yogurt (for creaminess)
Optional Add-ins:

1/4 cup chopped vegetables (spinach, bell peppers, mushrooms, onions)

2 tbsp shredded cheese (cheddar, feta, mozzarella)

Instructions

Preheat: Preheat your oven to 350°F (175°C). Lightly grease a muffin tin.

Whisk: In a medium bowl, whisk together the egg whites, salt, pepper, and milk or yogurt until just combined. Do not overmix.

Add Mix-ins: Gently stir in your chosen vegetables, cheese, and/or meat.

Pour: Evenly pour the mixture into the prepared muffin tin cups.

Bake: Bake for 15-20 minutes, or until the bites are set and lightly golden on top.

Cool & Serve: Let them cool in the tin for a few minutes before removing. Serve warm.
Notes
Don’t Overmix: Over-whisking the egg whites can lead to a rubbery texture.
Prevent Sticking: Ensure the muffin tin is well-greased or use silicone muffin liners for easy removal.
Meal Prep: These bites are perfect for make-ahead meals. Store cooled bites in an airtight container in the refrigerator for 3-4 days or freeze for up to a month.
