Description

Whip up a batch of these incredibly easy, protein-packed egg white bites for a healthy and portable breakfast or snack! Customize them with your favorite veggies, cheese, and herbs for a delicious, low-carb, and gluten-free meal that’s perfect for meal prep.

Ingredients

  • 6 large egg whites
  • Pinch of salt and pepper

  • 2 tbsp milk or plain yogurt (for creaminess)

Optional Add-ins:

  • 1/4 cup chopped vegetables (spinach, bell peppers, mushrooms, onions)

  • 2 tbsp shredded cheese (cheddar, feta, mozzarella)

  • 1 tbsp cooked, chopped meat

  • 1 tbsp fresh herbs (chives, dill) or a sprinkle of Everything Bagel seasoning

Instructions

  1. Preheat: Preheat your oven to 350°F (175°C). Lightly grease a muffin tin.

  2. Whisk: In a medium bowl, whisk together the egg whites, salt, pepper, and milk or yogurt until just combined. Do not overmix.

  3. Add Mix-ins: Gently stir in your chosen vegetables, cheese, and/or meat.

  4. Pour: Evenly pour the mixture into the prepared muffin tin cups.

  5. Bake: Bake for 15-20 minutes, or until the bites are set and lightly golden on top.

  6. Cool & Serve: Let them cool in the tin for a few minutes before removing. Serve warm.

Notes

Don’t Overmix: Over-whisking the egg whites can lead to a rubbery texture.

Prevent Sticking: Ensure the muffin tin is well-greased or use silicone muffin liners for easy removal.

Meal Prep: These bites are perfect for make-ahead meals. Store cooled bites in an airtight container in the refrigerator for 3-4 days or freeze for up to a month.

Reheating: Reheat gently in the microwave for 30-60 seconds to avoid a rubbery texture.

For Fluffier Bites: For a texture similar to Starbucks egg bites, add a tablespoon of cottage cheese to the mixture before blending.
