Ingredients
- 200 g white fish
- 6 eggs
- 1 cup spinach
- 1 onion
- 2 tbsp olive oil
- ½ cup shredded cheese (optional)
Instructions
- Sauté onion and spinach
- add fish
- pour in eggs
- bake at 350°F for 10–12 minutes
- Serve warm

Works well with leftover fish.
Can swap spinach for kale.
