Description

These easy pecan pie bars deliver all the flavor of a classic pecan pie in a simple bar form. Buttery crust, gooey pecan filling, and nutty crunch; perfect for any occasion!

Ingredients

For the Crust:

  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • 1 cup (2 sticks) cold unsalted butter, cubed

For the Filling:

  • 3 large eggs
  • 1 cup light corn syrup
  • 1 cup packed brown sugar
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 cups chopped pecans

Instructions

  1. Preheat oven
Preheat the oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.
  2. Make the crust.
In a bowl, combine flour and sugar. Cut in cold butter until the mixture resembles coarse crumbs. Press evenly into the prepared pan. Bake for 15 minutes, until lightly golden.
  3. Make filling
In a large bowl, whisk together the eggs, corn syrup, and brown sugar. Stir in the melted butter and vanilla, then fold in pecans until evenly coated.
  4. Add filling
Pour the pecan mixture over the pre-baked crust, spreading it evenly to cover the surface.
  5. Bake bars
Return the pan to the oven and bake for 25–30 minutes, or until the filling is set and golden brown. A toothpick inserted in the center should come out mostly clean.
  6. Cool and cut
Allow the bars to cool completely in the pan before cutting into squares or bars.

Notes

Chill bars before cutting for cleaner slices.

Add a drizzle of melted chocolate or caramel for variation.

Store in an airtight container at room temp for up to 3 days, or refrigerate for up to 1 week.
