These easy pecan pie bars deliver all the flavor of a classic pecan pie in a simple bar form. Buttery crust, gooey pecan filling, and nutty crunch; perfect for any occasion!
Ingredients
For the Crust:
- 2 cups all-purpose flour
- ½ cup granulated sugar
- 1 cup (2 sticks) cold unsalted butter, cubed
For the Filling:
- 3 large eggs
- 1 cup light corn syrup
- 1 cup packed brown sugar
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 2 cups chopped pecans
Instructions
- Preheat oven
Preheat the oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper. - Make the crust.
In a bowl, combine flour and sugar. Cut in cold butter until the mixture resembles coarse crumbs. Press evenly into the prepared pan. Bake for 15 minutes, until lightly golden. - Make filling
In a large bowl, whisk together the eggs, corn syrup, and brown sugar. Stir in the melted butter and vanilla, then fold in pecans until evenly coated. - Add filling
Pour the pecan mixture over the pre-baked crust, spreading it evenly to cover the surface. - Bake bars
Return the pan to the oven and bake for 25–30 minutes, or until the filling is set and golden brown. A toothpick inserted in the center should come out mostly clean. - Cool and cut
Allow the bars to cool completely in the pan before cutting into squares or bars.
Notes
Chill bars before cutting for cleaner slices.
Add a drizzle of melted chocolate or caramel for variation.
Store in an airtight container at room temp for up to 3 days, or refrigerate for up to 1 week.
