Description
A flavorful chicken scampi served over creamy garlic parmesan rice. This dish combines tender chicken, garlic, butter, lemon, and parmesan for a comforting and family-friendly meal.
Ingredients
For the Chicken Scampi
- 1.5 lbs boneless, skinless chicken breasts (cut into bite-sized pieces)
- 2 tbsp olive oil
- 4 tbsp butter
- 4 cloves garlic, minced
- ½ cup dry white wine (or chicken broth)
- ¼ cup lemon juice
- ¼ cup chopped fresh parsley
- ¼ tsp red pepper flakes (optional)
- Salt and pepper, to taste
For the Garlic Parmesan Rice
- 1 cup long-grain rice
- 2 cups chicken broth
- 2 tbsp butter
- 2 cloves garlic, minced
- ½ cup grated parmesan cheese
- Salt and pepper, to taste
Instructions
- Cook the Chicken Scampi:
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken pieces, season with salt and pepper, and cook until browned (5–7 minutes). Remove and set aside
- In the same skillet, melt butter and add minced garlic. Cook 1 minute until fragrant.
- Pour in white wine (or broth) and lemon juice. Simmer 2 minutes. Add red pepper flakes if desired.
- Return chicken to skillet, coat with sauce, and cook 5–7 minutes until done. Stir in parsley.
- Make the Garlic Parmesan Rice:
- In a saucepan, melt butter over medium heat. Add garlic and cook 1 minute.
- Stir in rice, then add chicken broth, salt, and pepper.
- Remove from heat and stir in parmesan cheese until creamy.
- Assemble & Serve:
- Plate garlic parmesan rice and top with chicken scampi.
- Garnish with fresh parsley or extra parmesan.
Notes
Substitute shrimp for chicken for a classic scampi.
Use vegetable broth for a lighter variation.
Add spinach, bell peppers, or mushrooms for extra veggies.
Best served fresh, but leftovers keep well up to 3 days in the fridge.
