Ingredients

  • 2 medium baking potatoes
  • 2 chicken breasts (or thighs)
  • 2 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • Optional toppings: shredded cheese, sour cream, chives, turkey bacon bits


Instructions

  1. Prepare the potatoes: Wash and scrub the potatoes. Prick with a fork, rub with olive oil, salt, and pepper. Bake at 400°F (200°C) for 1 hour until tender.
  2. Season the chicken: While potatoes bake, season chicken with paprika, garlic powder, onion powder, salt, and pepper.
  3. Cook the chicken: Bake chicken on a sheet pan with the potatoes or pan-sear until the internal temperature reaches 165°F (74°C).
  4. Assemble & serve: Split baked potatoes, fluff with a fork, and add your favorite toppings. Serve with the cooked chicken and optional roasted vegetables.
